View Full Version : Sausage and Pumpkin Pasta

I go to several AA potlucks a month. They've turned into my recipe guinea pigs.
This is the one I tried last night....
1 lb mild italian sausage, browned in a little olive oil.
Remove sausage, add a little more oil, and one chopped onion, and 3 cloves garlic.. After onion is transparent, add a tblspoon of white vinegar....
add a can of pumpkin, (pie filling) and a can of chicken stock. Mix well.
Return sausage to the pan, add some cinnamon and nutmeg.
Cook awhile, then add a half cup heavy cream.
Serve over Penne pasta with lots of parmasean cheese.
I thought this would taste real bizzare, but everyone, (including me) enjoyed it.
The original recipe came from Rachael Ray, but she uses white wine. I substituted the white distilled vinegar for the cup of wine. (doesn't seem like a good idea to cook with wine for AA potlucks.....)
