Mud Cake
Ingredients:
* 1 1/4 cups all-purpose flour
* 1 1/2 teaspoons vanilla
* 1 cup granulated sugar or use sugar substitute
* 1/3 cup vegetable oil or 1/3 cup fat free butter
* 1 1/2 teaspoons baking powder
* 3/4 cup skim milk
* 1/2 teaspoon salt
* 1 teaspoon instant coffee
* 1 egg
* 1/4 cup semisweet chocolate chips or 2 Hershey's chocolate bars broken up or 2 Hershey's chocolate bar w/almonds broken up
Preparation:
Preheat oven to 350°F. In an 8-inch square baking pan combine flour, sugar, baking powder and salt. In small bowl, whisk together milk, egg, vanilla, fat free butter and coffee. Bake at 350° for 20 - 30 minutes, or until wooden pick inserted in center comes out clean. Sprinkle chocolate chips or Hershey's broken up chocolate bar on warm cake. Let stand 1 minute then spread melted chocolate over cake.
