I made this today ... very good ...

BANANA BREAD

1 c. granulated sugar
1/2 c. brown sugar
1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 c. oil
1/3 c. water
1/2 tsp. vanilla
2 eggs
1 c. mashed banana

Mix together all dry ingredients. In separate bowl, beat eggs. Add eggs and remaining ingredients to dry mixture. Pour into greased and floured 9 x 5 loaf pan. Bake at 350 degrees for 1 hour. Bread is done when toothpick inserted in center comes out clean.

(I sifted all the dry ingredients and used melted margarine for the oil .. )

I made this again today ... as a 'cake' in a 9 x 11 baking dish ... excellent ... BUT cut the baking time by at least 10 minutes ...

I just saw this today as I was searching the recipe sections, Carol. I made a Banana Bread last night from googling it. It was 3 bananas, 2 cups flour, 2 eggs, 1/2 walnuts, 1 teas. baking soda, 1/2 cups shortening (I mixed crisco with butter blend, cup of sugar. Baking at 325 degrees for 1 hr. 15 minutes. It's better than my old one that I lost. (losing things sometimes is a GOOD THING (quoting Martha Stewart).

Glad you shared your recipe, I wouldn't have thought of putting cinnamon and vanilla in mine, but will try that next.
