Pistachio Cake
Pistachio Cake
Set oven at 350 degrees. Spray pan with Bakers Joy or grease and flour it. 1 package (18 ¼ ounces) white cake mix 1 package (3.4 ounces) instant pistachio pudding mix 1 C. lemon-lime soda (I used diet sierra mist in mine) 1 C. vegetable oil 3 eggs 1 C. chopped walnuts In a mixing bowl, combine the first five ingredients. Beat on medium speed for 2 minutes; stir in walnuts. Pour into 13”x9”x2” Bake for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack. Frosting 1 ½ C. cold milk 1 package (3.4 ounces) instant pistachio pudding mix. 1 carton (8 ounces) frozen whipped topping, thawed ½ C. chopped pistachios toasted (optional) In mixing bowl, beat milk and pudding mix on low for 2 minutes. Fold in whipped topping. Spread over cake. Sprinkle with chopped pistachios. Refrigerate for 30 minutes before cutting. Yield 12-15 servings.

I will try this because I love pistachio anything! Thanks for putting this up, and when I get it made and ate I will give my review according to Sioux. I am sure it is going to be a big hit around this household.

hi there...
PISTACHIO CAKE 1 (1 lb., 1 oz.) box white cake mix 1 (3 oz.) box instant pistachio pudding 1 c. 7-Up Pistachio Frosting (see below) 3 eggs 1 c. Crisco oil 2 oz. chopped walnuts Combine all ingredients except pistachio frosting in mixing bowl and beat 2 minutes. Pour into 9 x 13 inch sheet pan and bake in a 325 degree oven for 30-35 minutes, or until cake tests done. Cool on rack and frost.
