One-Pan Chicken and Potato Bake

One-Pan Chicken and Potato Bake


4 bone-in chicken pieces (1 1/2lb.)
4 large potatoes, cut into wedges *
¼ cup Zesty Italian Dressing *
¼ cup Grated Parmesan Cheese

Preheat oven to 400 F. Place chicken and potatoes in 13 x 9 baking dish. Pour dressing over all, sprinkle with cheese. Bake 1 hour * or until chicken is cooked through (180 F). Sprinkle with chopped fresh parsley, if desired. Makes 4 servings.

To change flavor, replace potato wedges with sweet potatoes or acorn squash.

*I tried this twice … suggest at least a half cup of dressing, cut potatoes in slices, baked covered for an hour, then another ½ hour uncovered. An hour doesn’t seem to be sufficient for the potatoes.

Hi Carol
I used to make something similar with chicken.

A half stick of butter, a whole chicken and a bottle of Italian seasoning in the crock pot for a couple of hours. It is really good serverd over rice.

I gave my DIL this recipe yesterday with a whole chicken and she and the family said it came out delicious. Even the oldest grandson told me this, Carol. Thanks now I'm going to try it.

After sharing this recipe with several others on my senior forum I made it yesterday. Very nice. I didn't cover it but cooked it lower about 375.
